THAI COOKING CLASS

On our last day in Thailand we did a Thai cooking course in Chang Mai where we got to go to the market with a group of about 8 others and learnt about all the traditional Thai ingredients, foods and herbs. We saw coconut milk being made from scratch--quite a process--and then went out to the cooking house where 8 gas stoves were laid outside around a table and we learnt to cook Thai style!

We each chose 6 different dishes (salads, curries, stirfrys, starters, soups and dessert) and then cooked them together and ate them all--I don't think I've ever been so full in my life! Thai cooking is actually relatively simple and seemingly quick although, much of the chopping and time consuming work was done ahead of time for us (but we still got to use our giant cleavers to chop the rest of our ingredients) and we even set things on fire to reduce the oil in the dishes!

I loved my desert that I made--sticky rice with mangoes--such a simple dish but DELICIOUS! I also made Tom Yum soup, green curry, lemon grass rice noodle salad, panang curry and spring roles! Des made pad Thai, red curry, chicken cashew nut amongst other delicious treats!  We have all the recipes in a book to take home so anyone who wants to be my guinea pig, feel free to stop by our pending place in Canada!!!
